Blueberry Cobbler

Area grocery stores have had fresh blueberries on sale for awhile now, and I’ve been making cobbler with them for the Wife and I to enjoy for dessert. I empty two pints of washed berries into a casserole, add a couple of packs of Splenda, a few pats of butter and a dash of vanilla extract. Then I mix up a batter consisting of a cup of flour, two packs of Splenda, a little salt and cinnamon, dots of butter and a half a cup of milk. I’ve discovered a runny batter produces the mottled crust seen above. I serve it with a few spoons of vanilla yogurt.

    Mmmm. I’m gonna try that! Fresh Market has 2 lbs of blueberries for $6.99.

    I’m pretty sure you can freeze unused berries.

    Thanks! Made this for the family last night — a big hit. I took a shortcut with Jiffy-Mix and I used real sugar, but you were the inspiration.

      Thanks. I’m glad it turned out well. Jiffy and Bisquick are products always found in our cupboard.
